Although typically made with Gin, we're making this with Hennessey VS, because Cognac.
1.5 oz Hennessey VSOP
0.5 oz simple syrup
0.75 fresh lemon juice
Champagne to fill glass
Pour the Hennessey VSOP, simple syrup and lemon juice into a shaker. Add ice and shake (after you put the top on it).
Use a Hawthorne strainer to strain into a Champagne flute. Top with Champagne, leaving 1 inch of the flute empty. Add lemon peel (twisted) for a garnish.
